Boudins? Must mean something different where I'm from. Boudins are roast entrails (more specifically the small intestine, a favorite of some of the tribes is to poor bile over them too) in my where...what is it in Cajun food?

boudin?????? well if you can get past the outer layer what the boudin is in then you'll like the inside....like a dirty rice mixture with chopped up gizzards,liver,onions and other treats we will not mention......like sausage in a way????
