Death-by-Peanut -Butter Cookies
½ cup (1 stick) butter, softened
¾ cup sugar
1/3 cup creamy peanut butter (I have used both name-brand and organic with equal success)
1 egg
½ teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1 2/3 cups (10 ounce bag) Peanut Butter Chips - I prefer Reese's
Heat oven to 350 F
Beat butter, sugar and peanut butter in large bowl until creamy. Add egg and vanilla; beat well.
In a separate bowl, combine flour, baking soda, and salt. Mix together well, then gradually add to butter mixture, beating until well-blended.
Stir in peanut butter chips.
Form scant ¼-cupful cookie balls onto ungreased cookie sheet lined with parchment and flatten slightly.
Bake 12-16 minutes or until lightly browned around edges. Cool for 1 minutes, then remove from cookie sheet to wire rack. Cool completely.
Recipe yields approximately 36 cookies.
I make a triple batch of these right away. they go FAST
