    Default Turkey Scrambler

    I'm sure that everyone has left-over recipies for all that left-over turkey in the fridge, but i just came up with one this morning that was pretty good. my son really enjoyed it but he'll eat anything so its hard to use him as a scale for something's edibility. lol

    scrambled 6 eggs
    cooked 4 strips of bacon ( i like the microwave cause i like my bacon a little chewy )
    took out about 1 cup of turkey chunks
    seeded and diced 1 average sized tomato

    hand seperated the bacon and turkey into little pieces and mixed it into the eggs after i scrambled them, i let that heat up pretty good before i put in the tomato and then just let it heat for another minute or two with the tomato in it. then i salted everything to taste and served with some extra buttery toast to make up for the dry turkey.

    i thought it was good, my wife will probably hate it but oh well, more for me and the boys i guess : )

    Sounds good. I'm a huge fan of scrambled eggs mixed with most any kind of meat, especially bacon. I also add tomatoes, but like you I don't let them cook fully. I'll sometimes add them just about 20-30 seconds before I dump everything on my plate.

    Try adding onions and green bell peppers to the mix too! Sauté them first then throw them in with the tomatoes.

    I agree with RD.. I usually flip some leftover meat chunks in a pan with onion/butter first (and Spike seasoning.. love it..)

    I used to use eggs, Ive migrated to hash browns (not the grated, the little cubes) mixed with the meats though.
    Eggs arent too good for you (not that potatoes fried in oil are.. lol).
